Job Description:
The Bakery Operations Manager is responsible for overseeing and coordinating the day-to-day operations of the bakery to ensure efficient production, high-quality products, food safety compliance, and excellent customer service. The role involves managing bakery staff, supervising production processes, controlling inventory and operational costs, implementing company policies and procedures, and ensuring compliance with food safety regulations and workplace standards. Working closely with management, suppliers, and employees, the Bakery Operations Manager drives operational excellence, continuous improvement, and business growth while maintaining the highest standards of quality and customer satisfaction.
Roles & Responsibilities
- Manage and oversee the day-to-day operations of the bakery to ensure efficient production, productivity, and achievement of business objectives.
- Plan, organize, and monitor daily production schedules to meet customer demand, seasonal requirements, and delivery deadlines.
- Lead, supervise, train, and evaluate bakery employees to promote teamwork, accountability, professional development, and high performance.
- Develop staff rosters and allocate resources effectively to ensure smooth bakery operations.
- Ensure all bakery products are produced in accordance with approved recipes, quality standards, and food safety regulations.
- Maintain strict compliance with food hygiene, sanitation, workplace health and safety, and regulatory requirements.
- Monitor inventory levels and coordinate the procurement of ingredients, packaging materials, equipment, and operational supplies.
- Develop and implement inventory control procedures to minimize waste, reduce production costs, and improve operational efficiency.
- Analyze production performance and identify opportunities for process improvements to enhance productivity and product quality.
- Prepare and monitor daily, weekly, monthly, and annual operational, production, inventory, and sales reports for management.
- Collect, analyze, interpret, and present operational data to support management decision-making and business planning.
- Monitor departmental performance and ensure production targets, quality standards, and key performance indicators are consistently achieved.
- Investigate and resolve operational issues, production delays, equipment failures, and customer service concerns promptly and effectively.
- Coordinate preventive maintenance schedules and arrange repairs for bakery equipment to minimize operational downtime.
- Support the implementation of new production systems, technologies, and operational improvements to enhance bakery performance.
- Develop, implement, and regularly review bakery operating procedures, production standards, and quality assurance processes.
- Ensure all operational activities are properly documented and comply with company policies, food safety legislation, labour regulations, and licensing requirements.
- Work closely with suppliers to maintain consistent product quality, reliable supply chains, and competitive pricing.
- Assist in the development of new bakery products and the continuous improvement of existing recipes and production methods.
- Monitor sales performance and recommend strategies to improve profitability, customer satisfaction, and business growth.
- Handle customer complaints professionally and implement corrective actions to maintain excellent customer service standards.
- Manage cash handling procedures, stock reconciliation, inventory controls, and daily financial reporting where required.
- Identify operational risks, compliance issues, and improvement opportunities, reporting findings and recommendations to senior management.
- Collaborate with management and other departments to support strategic planning, operational efficiency, and long-term business sustainability.
Selection Criteria
- Minimum 4 years’ supervisory or management experience in bakery operations, food production, hospitality, retail, or a related industry.
- Diploma or Bachelor’s Degree in Food Technology, Bakery Management, Hospitality Management, Business Management, or a related field is preferred.
- Strong knowledge of bakery production processes, food safety regulations, HACCP principles, and quality assurance standards.
- Experience in inventory management, production planning, cost control, and operational reporting.
- Proficient in Microsoft Office applications, including Excel, Word, and Outlook.
- Strong analytical, organizational, and problem-solving skills. Excellent leadership, communication, and interpersonal skills.
- Ability to work under pressure, manage multiple priorities, and meet production deadlines.
- Strong understanding of workplace health and safety requirements and labour regulations.
- Demonstrated commitment to continuous improvement, operational excellence, and customer satisfaction.
