Job Description:
Roles & Responsibilities
- Lead, supervise, mentor, and motivate the culinary team to maintain high performance and teamwork in the kitchen.
- Plan, develop, and update menus, including seasonal menus and daily specials, ensuring creativity, quality, and consistency.
- Prepare and organize daily prep lists to ensure the kitchen team is fully prepared for service.
- Monitor and control food costs, manage inventory levels, and ensure efficient use of kitchen resources.
- Maintain high standards for food storage, stock rotation, product quality, presentation, and kitchen safety.
- Ensure full compliance with all relevant food safety regulations, health codes, and sanitation standards.
- Establish and oversee regular maintenance and cleaning schedules for kitchen equipment, storage areas, and workspaces.
- Participate in the recruitment process by interviewing, evaluating, and selecting qualified kitchen staff.
- Prepare staff schedules and support human resource processes such as training, performance monitoring, and team development.
Selection Criteria
- Strong knowledge of culinary techniques, cooking methods, and professional kitchen practices.
- Proven ability in menu planning, recipe development, and food presentation.
- Excellent leadership and team management skills, with the ability to motivate and guide kitchen staff.
- Thorough understanding of food safety standards, health regulations, and sanitation practices.
- Advanced knife-handling skills and safe food preparation techniques.
- Working knowledge of wine and beverage pairing to complement menu offerings.
- Basic computer proficiency, including experience with Microsoft Office and kitchen management systems.
- Previous experience in kitchen supervision or management within a professional culinary environment.
