Job Description
Butchery Operations Management
- Manage and oversee all daily butchery operations including meat cutting, processing, trimming, portioning, packaging, labeling, and product display.
- Plan, organize, and supervise daily and weekly production schedules to meet customer demand while minimizing waste.
- Ensure all meat products consistently meet company quality, freshness, and presentation standards.
- Monitor yield control, portion accuracy, and wastage reduction to improve department profitability.
- Oversee stock ordering, receiving, storage, rotation, and inventory control to maintain product availability and freshness.
- Ensure proper cold-chain management and correct storage conditions at all times.
- Analyze sales trends and customer demand to support effective production planning and stock management.
- Provide operational input and performance updates to management when required.
Team Leadership and Staff Management
- Lead, supervise, and motivate butchery staff to maintain high productivity and professional standards.
- Assign daily tasks and responsibilities and ensure efficient workflow within the department.
- Recruit, train, and develop staff in meat handling, cutting techniques, hygiene practices, equipment use, and customer service.
- Prepare staff schedules and ensure adequate staffing levels to meet operational needs.
- Monitor staff attendance, performance, and conduct, and address issues in line with company policies.
- Promote teamwork, accountability, and a positive, safe, and professional working environment.
Food Safety, Hygiene, and Compliance
- Ensure full compliance with food safety regulations, workplace health and safety requirements, and company policies.
- Enforce strict hygiene standards, including proper use of personal protective equipment (PPE).
- Ensure safe handling of knives, machinery, and other equipment.
- Implement and monitor cleaning and sanitation schedules for all work areas and tools.
- Conduct regular hygiene, safety, and quality inspections and take corrective action where required.
- Ensure all equipment is clean, maintained, and reported for repair when necessary.
Customer Service and Business Support
- Provide high-quality customer service, including product advice, special orders, and complaint resolution.
- Ensure accurate product information and professional interaction with customers at all times.
- Maintain a clean, organized, and attractive department presentation.
- Work closely with management and other departments to support overall business operations.
- Prepare and submit operational reports and performance information as required.
Financial and Cost Control Responsibilities
- Monitor departmental costs, including raw materials, labor, and operational expenses.
- Implement cost control measures to reduce waste and improve operational efficiency.
- Support management with budgeting, forecasting, and performance tracking.
- Ensure responsible use of company resources and equipment.
Other Responsibilities
- Perform additional operational or managerial duties as assigned by management.
- Support company initiatives, policy implementation, and continuous improvement efforts.
Requirements
- Proven experience as a Butchery Manager, Senior Butcher, or in a similar supervisory role.
- Strong technical knowledge of meat processing, cutting techniques, and food safety standards.
- Experience in staff supervision, training, scheduling, and performance management.
- Strong organizational, planning, and multitasking skills.
- Good communication and interpersonal skills with a customer-focused approach.
- Ability to work effectively under pressure in a fast-paced environment.
